Saaga or leafy vegetables are rich in all kinds of vitamins and minerals, High in fiber and low in calories. Saaga Bhaja is also called as ‘Saga Kharada’ in some parts of Odisha. Greens can
help manage your weight.

SERVES – 2 PEOPLE TOTAL TIME – 20 MINS

INGREDIENTS

  • Kosala Saga -500 gm
  • Baigana ( Brinjal ) – 100gm
  • Red Onion -50 gm
  • Rasuna (Garlic) – 5 small cloves
  • Kancha Lanka ( Green Chilies) – 1 Pc
  • Paanch Phuran 1tsp with one dry red chilli for tadka
  • BADI (black gram flakes )- 15grm (Optional) & Freshly grated coconut(Optional)
  • Luna ( Salt ) – as per taste
  • Sorisa Tela ( Mustard oil ) – 2 tsp

PREPARATION:

Wash the Kosala saga and then cut into small slices (1-2 cm is best). Cut the brinjal into small cube size. Then cut the onion and green chilies into small slices. Crush the garlic and keep aside.

Cooking INSTRUCTIONS

  • Heat oil in a pan, fry BADI till to golden brown, takeout the BADIs’ from the pan and keep aside
  • Add mustard seed or paanh Phuran, dry chilies slices in the rest oil, allow spluttering
  • Add onion to it and fry till it turns golden brown
  • Add brinjal to it and sallow fry for 2-3 minutes ( Optional : You can add turmeric / Haldi here )
  • Then add the spinch to ir and cook for 2-3 minutes in medium flame
  • Add BADI and salt as per taste, cook for 1 minutes to make the spinach tenderly cooked
  • So now go on stirring till all the water in the saaga dries out.
  • Your Saaga Bhaja is ready. Serve it with plain rice, Curry and dal. Also tastes great with Pakhala Bhata (the cooked rice which is soaked in water).

Tips:

It’s a simple recipe needs less cooking time. Keep this moist, do not over cook it. You can balance the spiceness as per your choice by adding more green chillies. Freshly grated coconut enhances the taste. Try with Leutia Saga with same method. Please try Palanga Saga Besara
