Ingredients
  

  • 250 gm Poi manji (Malabar Spinach Seeds with small stem)
  • 50 gm Aloo ( Potato )
  • 100 gm Pumpkin (Kakharu)
  • 50 gm Red Onion
  • 50 gm Taro ( Arbi / Kuji Saru )
  • 6 small cloves Rasuna (Garlic)
  • 2 pc Kancha Lanka ( Green Chilies)
  • 3 tsp Sorisha (Mustard seeds)
  • 1 tsp Jeera (Cumin Seeds)
  • 1 tsp Haladi ( Turmeric powder )
  • 15 grm BADI
  • Luna ( Salt ) – as per taste
  • 4-5 tsp Sorisa Tela ( Mustard oil )

Instructions
 

  • Wash the Malabar Spinach Seeds. Cut other vegetables into small cubes. Peel the potatoes and cut into small cube. Then cut the onion and green chilies into small slices. Prepare fine paste of Mustard seeds, Cumin seeds, garlic, Green Chilli and Haldi.
  • Add mustard seed or paanh Phuran in oil, allow spluttering.
  • Add onion and dry chilies slices to it and fry till it turns golden brown.
  • Add potatoes and other vegetables to it and sallow fry for 2-3 minutes.
  • Add poi manji and stir fry for another 2-3 minutes.
  • Then add the besara paste to the fried vegetables and stir it for 2-3 minutes to coat veggies properly in low flame.
  • Add 1-2 cup of water to it, cover the lid and cook for 5-10 minutes.
  • Add salt as per taste, cook for 1 minutes to make the poi manji and veggiestenderly cooked.
  • Add 1-2 tea spoon of Amchur Powder or one piece of Ambula (Dry mango) to enhance the taste.
  • Enjoy the delicious Poi Manji rai with steamed rice. Feel the crunchiness of poi manji.

Notes

Health Benefits:

Malabar spinach is high in Vitamin A, Vitamin C, iron, and calcium. It has a high amount of protein for a plant and is also a good source of magnesium, phosphorus, and potassium.

Tips:

It’s a simple recipe needs less cooking time. Do not overcook at the time of sauté as besara may crate bitter taste.
