babAlu Kasais an easy and simple pan-fry roasted recipe made with small or baby potatoes. it is an ideal recipe made and served as a side dish to indian flatbreads or to any rice-based recipe. the recipe is very simple and quick to make without much hassle and can be finished with all the basic ingredients available in your kitchen.
Alu Kasa(Baby Patato Fry)
Aloo kasa is the dry version of Aloo dum. The all time favorite of khanti odia and all indian. People of odisha love to eat aloo kasa with Dahi Bara and other tiffin items. Its easy to prepare and delicious.

Ingredients
- 1 1kg Baby potato
- 1 Medium Size Onion sliced
- 2 Medium Size Onion Paste
- 3 tbsp Ginger & Garlic paste
- 2 Medium Size Tomato Puree
- 1/2 tsp Turmeric powder
- 1 tbsp Red chili powder
- 1 tsp Jeera Powder ( Cumin)
- 2 tsps Dhania Powder ( Coriander)
- 1/2 tsp Panch phuran –½ tsp
- 2 tbsp Coriander leaves chopped
- 3 tbsp Sorisa Tela (Mustard Oil)
- 10-15 pcs Curry Leaves
- 1/2 tsp Garam Masala
- Salt to taste
- Dahi (Curd) Chat masala (Optional)
Instructions
- Wash the baby potatoes and add them to pressure cooker. Wait for one whistle. Allow it to cool down.
- Heat oil in a pan. Add paanh Phuran, allow spluttering.
- Add curry leaves, then onion paste and stir fry the onion till golden brown.
- Add ginger garlic paste and sauté for 1 minute to remove raw smell.
- Add tomato paste and salt, sauté for 2-3 minutes in low flame.
- Add turmeric powder and chili powder. Add little water and saute.
- Add jeera and dhania powder each one tsp.
- Fry in low flame and allow the masala to release oil.
- Then add baby potatoes. Mix well and fry slowly (kasa) for 5 minutes in low medium flame.
- Add one cup of warm water and mix well. Cover the lid for 10 minutes in low flame.
- Add garam masala and Garnish with coriander leaves.

Notes
Tips:
You can cut big potato into small cubes and add if baby potatoes are not available. Add 1 tsp of chatmasala to enhance the taste or add curd (dahi) to the masala while preparing kasa to double the taste. Add one chopped tomato to it and feel the byte of tomato .
