Aalu Phulakobi Tarakari – ଆଳୁ ଫୁଲକୋବି ତରକାରୀ

Here the word Phula Kobi is the odia word and tarkari or jhola is curry in English. Cauliflower is versatile and can be prepared in a number of ways. This recipe is a delicious combination of potatoes and Cauliflower. Serve this curry with steamed rice, dal and other side dishes. This is a most common dish in every odia households during winter. So do try as the season of cauliflower is on.

Ingredients

  • 500 grams Phula Kobi (Cauliflower florets)
  • 200 gram Aalu ( Potatoes )
  • 100 Gram Piaja (Onion)
  • 100 Gram Tomato ( Tomato )
  • 1 tps Jeera ( Cumin seeds )
  • 1 tps Jeera Powder ( Cumin)
  • 2 tps Dhania Powder ( Coriander)
  • 1-2 tps Sukhila Lanka Powder ( Dry chilies )
  • 3 tbps Gginger-garlic paste
  • 20 gms Dhania Patra (Coriander leaf )
  • 1 tps Haladi Gunda ( Turmeric powder )
  • 1 inch Dalchini ( Long Cinnamon )
  • 2 Pcs Aleicha ( Small Cardamom )
  • 2 Pcs Lavanga (Clove)
  • 4 tbps Mustard Oil or other vegetable oil
  • Salt ( as per taste )

Instructions

  • Remove leaves and stem from cauliflower and cut into pieces. Check once as chance of insects inside the florets.I recommend to dip the florets in turmeric water.This will help to kill any insects in the cauliflower florets if present.Peel off the potatoes and cut into cube sizes.
  • Make a fine paste of tomatoes (50 gm), dry chilies, coriander leaf (10 gm) and keep aside.
  • Fine chop the onion, rest tomatoes (50 gm) and rest coriander leaves (10gm) and keep aside.
  • Heat oil (2btps) Mustard Oil in the pan, add cauliflower, potatoes and salt as per taste and stir fry till cauliflower turns light brown and keep aside.

Tips:

  1. Two variations of the recipe. 1. You can and patato, drumstickand the paste to the chonk and then boil and stir fry.
      2. you can boil the patato, Drumstick first and then add besara paste. At the end you can add chonk and stir fry.
